Now I have read in books that there is a man called Tom Wood who plays parts such as 'patient' or 'peseant'. But what does he look like? He is always listed amongst a group of people.

Chaplin employed dozens, and eventually hundreds of people as extras or in small roles. Why are you interested in this one?

As far as I know, Tom Wood is the rotund young man who played Loyal Underwood's son in 'Sunnyside' and the fat woman who Charlie uses for a gangplank in 'A Day's Pleasure'. He can also be seen in 'How to Make Movies' diving into the studio pool. There are listings in various filmographies for a Tom Wood in other CC films, but I've never been able to confirm them.
